The Barbeque
1. Firstly, it is important to find a good spot for your barbeque. Space is a key point, so keeping it away from bushes, trees, fencing, awnings and sheds is a sensible plan.
2. An even flat surface that is sheltered from the wind is also ideal.
3. Whoever is official burger-flipper should not wear any loose, flowing clothes and long hair needs to be tied back.
4. To light the barbeque, only use recommended barbeque lighting fluid, and follow the manufacturer's instructions closely.
5. Matches, lighters and barbeque fluid must be kept well out of reach of young hands.
6. While the fire is burning the barbeque must never be left unattended, otherwise it may get out of control or children may get too close to it.
7. Energetic children, inquisitive pets and barbeques are not a match made in heaven, so keep an extra special eye on them from when the fire is lit until it is out.
The Cooking
Apart from the inherent danger of the barbeque fire, unhygienic cooking can be a hazard to people at your barbeque. These guidelines will keep your food safe and tasty:
1. If you have frozen some of the meat you intend to use, it must be defrosted thoroughly before being transferred to the grill.
2. In fact, some meat, especially poultry, should also be oven cooked in advance before being put on the grill for extra crisping. To make sure your chicken has been properly cooked, spike it and watch that the juices run clear before you eat.
3. As always when handling meat, keep raw and cooked meat separate even to the extent of using different utensils to cut and move them.
4. Beef burgers must also be completely cooked through. To check on their progress, spike them and see that the juices run clear.
5. With heavier burgers, it is a good idea to give them a quick blast in the oven (at around 200°C 400°F) for a quarter of an hour to heat them through.
6. Meat needs to be evenly cooked, so be sure to regularly flip and move any burgers or chicken that you are grilling.
7. Once the food is cooked, tuck right in, as barbequed food should be eaten immediately.
