Avocado&Strawberry Salad
Seared Scallops with Guacamole, Coriander & Chilli

Spring clean

The cabbage and the pear rid the colon of waste matter and the celery purifies the lymph.

You will need:

Makes 200ml (7floz)
250g (8oz) pear
125g (4oz) cabbage
50g (2oz) celery
25g (1oz) watercress

Juice all the ingredients and serve over ice, decorated with celery sticks, if liked.

Good for: Detoxifying - Most people have heard of the cabbage soup diet but many don't know why cabbage is such a good detoxifier. It aids digestion and prevents both fluid retention and constipation and its benefits are noticed almost immediately. It is perfect for juicing as its nutrients are most abundant when raw. In fact, many nutritionists call cabbage the perfect food. Celery, watercress and pears are the ideal accompaniments as they also contribute to the detoxification process.
